At first i only built the farm and it worked fine. Then i built my "castle" and it still worked fine. Just as i built the little wall (already taken down again in the pictures) around the set up it stopped working (no more golems spawning). i changed lots of blocks, looked at the line of sights and the capability of sleeping for the villagers ...

If it still doesn't work as intended, it's due to that village you've found that's relatively close to your iron farm. I'm no technical expert when it comes to Minecraft bedrock mechanics, but from experience, yeah, every farm containing a villager should always be 150 blocks away from other farms and even villages.There are many different iron farms I am not an expert but this doesn't look like it's going for efficiency. To build a okay farm making like a stack an hour look at avomance on Youtube. To build a ridiculous farm look at tango tek if you want 10,000 an hour. So with 20 villagers there can be up to 2 golems and with 30 there can be up to 3 golems. But every villager needs a bed and 75% of them need to have worked in the previous Minecraft day. In 1.19.3 I built a simplistic farm that uses the same mechanics as the OP's farm. It worked for 2 days & nights, then two villagers got locked in panic mode and would. not. stop. I blocked off the zombie and they were still panicking. I break a bed... and the one associated to that bed stops panicking instantly.

For the golems to spawn you will also need 10 villagers and 20 beds. All villagers must be linked to a bed. In addition 75% of all villagers must be linked to a job block and have worked that job block in the previous day. So once it's all setup correctly it will still take one more day to start working.
